Fine Dining Table: Andrés, tell us a little about Frances. Where did the idea to open this restaurant come from?
Andrés Encinales: Of course, but before talking about Frances, let me tell you about Takami. We started in 2001 when my partner was graduating from the University of Los Andes. He was very passionate about sushi, and along with a friend, he decided to set up a sushi bar project as part of his thesis. That’s how Takami began.

Fine Dining Table: And how has Takami evolved since then?
Andrés Encinales: We began during the Asian cuisine boom in Colombia 25 years ago. Today, Takami has 43 restaurants and 22 brands. We’ve diversified quite a bit, from fast-food restaurants to more elaborate concepts. Frances is our latest opening, and while it’s not strictly fine dining, we serve a high-end clientele in Bogotá.

Fine Dining Table: What sets Frances apart from other restaurants in Bogotá?
Andrés Encinales: We wanted to explore the classics, to return to the essence of French cuisine. We were offered a location in a great area of the city and saw there was space for this type of cuisine. We began working with Peruvian chefs experienced in French cuisine, as it’s the foundation of all gastronomy.

Fine Dining Table: Let’s talk about the menu. How was the process of defining it?
Andrés Encinales: We worked with the chefs on an initial draft of the menu, cooked it over several sessions, and then refined it. This process takes time, but it’s essential to shape a viable concept.

Fine Dining Table: What are some of your favorite dishes on the menu?
Andrés Encinales: We’re very proud of classics like steak tartare, escargots, and truffled brie. I also love the pepper-crusted tuna and our sauces, like the bearnaise sauce. The quality of the fries is crucial in a French restaurant, and ours are definitely French.

Fine Dining Table: How do you see the opening of French cuisine in Bogotá? Is the clientele receptive?
Andrés Encinales: Definitely. In Colombia, there are generations who have traveled and been exposed to great cuisine. We’ve also seen growth in contemporary Colombian cuisine, creating a public that seeks more sophisticated culinary experiences.

Andrés Encinales: We’ve selected a team that, above all, consists of good people. That foundation allows us to build exceptional service. We’re also constantly evolving and improving every detail.
