Fine Dining Table: Welcome, Artem! It’s great to be here at Nooks in Poznań. How are you feeling today about our visit?

Artem: I’m quite excited, honestly. It’s my first time having an interview like this. Your visit reassures us that we’re on the right track with our culinary creations and innovations, so thank you for coming.

Fine Dining Table: Tell us a bit about your background and how you started in the culinary world.

Artem: My journey began about ten years ago during my university days here in Poznań, where I was studying hotel and restaurant management. The program offered opportunities to gain experience abroad in countries like France and Italy, though I personally went to France and Italy only. It was in the last year of my studies that I met the owner of Nooks, who was a chef at another restaurant. We worked well together and developed a strong personal and professional relationship.

Fine Dining Table: How did your partnership with the owner evolve into what Nooks is today?

Artem: After building a strong foundation and sharing similar personal and professional values, when he had the opportunity to open his own place, he invited me to join him. Although I’m not a partner in the business, I am heavily involved in the kitchen and in creating our menu alongside the whole team, including the owner and his wife, who manages our restaurant.

Fine Dining Table: What makes the menu at Nooks unique? How often do you change it?

Artem: We focus on surf and turf combinations, blending meat and seafood in unique ways. We revise our menu seasonally, about three to four times a year, based on our creative sessions and feedback from our customers. Our specialties have included dishes like duck with crawfish and pork with shrimp. We always include an octopus dish, but we vary the preparation and presentation.

Artem: Absolutely. One of the best aspects here is the team dynamics. We all contribute ideas, from the kitchen staff to the owners. It’s not just about one person setting the direction; everyone has a voice in the process. This collaborative spirit extends to our daily operations and how we handle the stress of the restaurant industry, ensuring that everyone knows what to do even when I’m not there.

Artem: Poznań’s culinary scene is rapidly evolving. With more restaurants opening and the influence of global trends thanks to the internet, local gastronomy is reaching new heights. Just a few years ago, there were hardly any restaurants in Poznań recognized by the Michelin Guide, and now there are about fifteen. This recognition is a testament to our growth and innovation.
