Chef Felipe: Not too bad, thank you. Everything’s great.

Fine Dining Table: You have quite a diverse background in the culinary world, having worked in the UK, Ireland, Croatia, and the USA before coming to Poland. What sparked your passion for cooking?

Chef Felipe: I started in the kitchen 23 years ago. The journey through different countries has been enriching and I’ve been working here in Poznań for the last three years. It’s been a good experience.

Fine Dining Table: Beyond cooking, you’ve mentioned engaging in sports, particularly boxing, which you’ve practiced for over 32 years. How do you balance this with your culinary career?

Chef Felipe: Sport is crucial for me; it helps keep me focused and energetic. I start my day early, preparing meals for my family, then it’s off to the gym before heading to the kitchen.

Fine Dining Table: Turning to Tu Restaurant, could you share how your experience has been from its inception to now?

Chef Felipe: I started at Tu Restaurant at its beginning, about three years ago. It’s been a rewarding journey. The place is top-notch, and I have no plans to leave. We face challenges, like any kitchen, but learning and improving our cooking is part of our daily routine.

Fine Dining Table: For a guest visiting Tu Restaurant for the first time, what would you recommend they start with?

Chef Felipe: I’d recommend starting with something light like a sparkling wine or cocktail to ease into the meal. From our menu, the starters like Skalos or Katar are excellent introductions.

Fine Dining Table: And if they are looking for a main course?

Chef Felipe: For meat lovers, our beef steak with mashed potatoes and vegetables is a must-try. For those who prefer fish, our trout with potato and leek puree is a highlight.
