Fine Dining Table: We are thrilled to be here at Spot Restaurant in Poznań, Poland. Monika, can you share with us the history and evolution of Spot?
Monika: Absolutely! Spot is now 15 years strong since its inception in 2006. Initially, we envisioned a concept store, not just a restaurant. We hosted a variety of activities—flower shops, workshops, a children’s area, a spa, and even a hairdresser. Over the years, though, Spot has primarily become known for its restaurant, although we still offer cooking lessons and have a wine shop.
Fine Dining Table: That’s quite a comprehensive setup! How have your personal experiences influenced the direction of Spot?
Monika: My personal life heavily influenced our initial offerings. When we started, I had young kids, so we tailored our services to what people my age needed—places to eat, learn, and enjoy time with their children. We’ve always been adaptive, listening to our customers and evolving based on their needs. My travels have also inspired me to bring different ideas and practices from around the world to Spot.

Fine Dining Table: Speaking of influence, how has being recognized by prestigious awards like the MICHELIN Guide affected Spot?
Monika: It’s incredibly motivating. Such recognition not only energizes us to improve but also helps us stand out in the competitive restaurant scene. It pushes us to continue enhancing our services and offerings.
Fine Dining Table: Poland’s gastronomy has been making waves recently. What can be done to promote it as a top culinary destination?
Monika: Poland has a rich gastronomic culture that the world is just starting to recognize. We need to continue showcasing the modern and dynamic nature of our cuisine, which has evolved significantly over recent years. Events, promotions, and perhaps more international engagement could help highlight Poland’s culinary prowess.
Fine Dining Table: At Spot, you emphasize simplicity and honesty in your dishes. Can you expand on that philosophy?
Monika: Yes, our philosophy is about simplicity and honesty. We focus on using a few high-quality ingredients rather than overwhelming our guests with complexity. This approach respects both the food and our diners, ensuring they enjoy every aspect of their meal without confusion.

Fine Dining Table: Looking ahead, what future plans do you have for Spot?
Monika: We’re planning to expand our self-sufficiency. We want to enhance our bakery, improve our in-house smoking techniques, and even develop our small winery further. These efforts align with our commitment to quality and our desire to offer unique experiences to our guests.
Fine Dining Table: Lastly, if you were to recommend a personal favorite from your menu, what would it be?
Monika: I’d recommend trying a variety of small dishes, particularly our appetizers, which are great for sharing. This way, you get to experience a range of what we offer, capturing the essence of Spot’s culinary spirit.
Fine Dining Table: Monika, thank you for sharing your insights. We invite all our readers to experience the unique offerings of Spot Restaurant here in Poznań.
