Dressed in white and with a bow tie, Yujiro Watanabe welcomes his guests with a smile. His elegant spirit of service is defined as "delicious, fun and welcoming." Three highlights are the ground sesame in a large bowl, the shaved karasumi (salted and dried mullet roe) in front of the customers, and the staging of the kitchen. He uses Niigata rice, produced by his sister and her brother-in-law. The sea bream chazuke (green tea poured over rice) is a legacy from his mentor. Gratitude is felt in the atmosphere and conversations are lively.
