Given his past at El Bulli (recognized as the World's Best Restaurant five times), it's no surprise that Sergio Barroso brings an innovative approach to this sophisticated seafood establishment. Not only does he focus on rescuing native flavors that have largely disappeared from culinary memory, but he also leads the first restaurant accredited as zero waste in Latin America. Here, cooking oils, glass, plastics and paper are meticulously recycled, while the stunningly creative dining room features curvilinear chandeliers that maximize lighting with minimal energy consumption.

The menu, inspired by a wide range of ingredients such as yellow shrimp and Coquimbo woodcock, comes from small producers and suits Barroso's mood. As for drinks, the extensive wine list offers almost 30 options available by the glass.
