Chef César Zapata and Ani Meinhold's vibrant blend of Vietnamese flavors in the MiMo district does not go unnoticed. This restaurant, with its concrete structure adorned with bright red lanterns, resembles a nightclub with its seductive lighting, spacious interior and on-site DJ. However, none of this distracts from the food, which is boldly seasoned and served in generous portions. Crispy mint-wrapped imperial rolls and garlic butter egg noodle nests, aggressively stir-fried in a wok, are excellent starters. Everything is meant to be shared, especially the pho, which is served in a cauldron filled with herbs, rice noodles, and a tender, juicy slab of hickory-smoked short ribs.
