Fine Dining Table Team: Hello Edina, thank you for joining us today. Can you start by telling us a bit about yourself and how you came to run the Taj Mahal restaurants?

Edina: Hi, thank you for having me. My name is Edina, and I am the executive chef here at Taj Mahal. My husband and I run two Taj Mahal restaurants in Dubrovnik. Our journey started with a deep passion for food and the hospitality industry. We both have extensive experience in this field, and in 2004, we decided to open our first small restaurant in the old town of Dubrovnik. It’s hard to believe it’s been almost 20 years now!

Fine Dining Table Team: That’s wonderful! What inspired you to focus on Bosnian cuisine?

Edina: Both my husband and I have roots in Bosnia, and the food we serve is what we grew up with. Bosnian cuisine is hearty, warm, and truly food for the soul. We wanted to share this part of our heritage with others, and that was the inspiration behind Taj Mahal. We aim to present authentic Bosnian dishes, but with a twist, incorporating some non-traditional ingredients and elements of Mediterranean cuisine due to our location.

Fine Dining Table Team: How would you describe your approach to cooking at Taj Mahal?

Edina: Our philosophy is to cook for our guests as if they were coming into our own home. We put a lot of effort and love into every dish. While we may incorporate professional techniques to grow our business, at the heart of it, it’s all about the food. We love gatherings and sharing meals, and we hope that comes through in our cooking.

Fine Dining Table Team: Can you tell us more about the ingredients you use?

Edina: Absolutely. About 90% of our menu is meat-based, so we take great care in sourcing our meat. We have our own butcher shop to ensure the meat is local and of the highest quality. Most of the time, it’s organic. The same goes for our vegetables; we source them from local suppliers and ensure they are always in season.

Fine Dining Table Team: In today’s culinary world, there are so many different dietary trends and categories. How do you navigate this at Taj Mahal?

Edina: While it’s important for a business to adapt and offer a variety of options, we stay true to our roots. We believe in the quality of our ingredients and the authenticity of our dishes. Trends come and go, but the essence of good food remains the same. It’s about using quality ingredients and executing dishes well.

Fine Dining Table Team: Do you think the current trend of creative cooking sometimes overshadows the quality of the ingredients?

Edina: Yes, the quality of ingredients is crucial for the final dish. Creativity is important, but it should not come at the expense of the fundamental quality of the food. A dish needs to be memorable not just for its appearance but for its taste and the emotions it evokes.

Fine Dining Table Team: Do you have any future projects or expansions in mind?

Edina: For now, we are focused on our two restaurants in Dubrovnik. Managing them is no small task, but who knows what the future holds. We are always open to new opportunities.

Edina: I believe it’s our energy and hospitality that set us apart. We treat every guest like a visitor to our own home. This is our house, our home, and we strive to make everyone feel that warmth and welcome. That’s why everyone should come and experience Taj Mahal.

Edina: The old town location is definitely my favorite. It’s our baby, the first one we started with, and it holds a special place in our hearts.

Edina: It’s hard to choose because we have such an extensive menu. However, our local beef and chicken dishes are always a great choice. We take pride in the quality and flavor of these dishes.
