If a culinary experience centered around extra virgin olive oil appeals to you, Aureum, located within the Picualia olive oil cooperative, could be your ideal destination. In addition to offering educational tours, tastings, and various activities related to olive oil, this attractive restaurant has a wine cellar. The head chef, Paco Simón, highlights olive oil in his cooking, paying tribute to local tradition both in the menu and in his two tasting menus: Labora Oliva and Fenologicum. This is the essence of Aureum, a menu created by the chef to be enjoyed in the room overlooking the winery. Picualia is the first olive cooperative in Spain that houses a restaurant in the heart of an oil mill.
The first menu is based on the gastronomic roots of working in the fields, reflecting what farmers ate during the olive season and paying tribute to the day laborers and farmers of 30 or 40 years ago. Extra virgin olive oil, harvest after harvest, is the common thread that allows us to prepare dishes as interesting as those that make up this menu.
The menu is narrated dish by dish by the head waiter, José Antonio Simón. In addition, Aureum offers a pairing menu experience in which dishes from the gastronomic menu are combined with carefully selected wines to further highlight the flavors and aromas of each dish. Diners can enjoy an unforgettable meal in the restaurant's elegant room, which has views of the Picualia winery.
