Chef Fulvio Miranda defied convention in Panama City by creating Cantina del Tigre, a culinary space focused on ceviche, an almost forgotten dish in his country, inspired by regional recipes. Two years later, the restaurant debuted at number 25 of the Top 50 Restaurants in Latin America 2023, winning the Highest New Entry Award, sponsored by Aspire Lifestyles.
Opened in 2022, Cantina del Tigre offers a variety of traditional but reinvented Panamanian dishes. Miranda's boldness and creativity are reflected in colorful preparations that are gaining popularity throughout the region.
Originally from the province of Chiriquí, Miranda founded his first gastronomic venture after seven years in the industry: a food truck called Esa Flaca Rica, which offers burgers inspired by the flavors of his homeland. In addition to her culinary talent, Miranda is a bassist and composer, and released a solo album in 2022 called Vieto Sound System.
Cantina del Tigre's unique dishes, such as Cebiche de Mamón Chino, red rice, and rice tamale with prawns, are difficult to find elsewhere. The restaurant also offers vegetarian and vegan options, along with a selection of drinks including Papaya Negronis and Cucumber Mezcal Sours.
