Malacate is a restaurant located at Calle 70A #5-44, inside Hotel Coco, in Bogotá’s Zona G. This establishment is the creation of Antioquian chef Jhon Zárate, known for his dedication to highlighting the quality and origin of local ingredients. Before launching Malacate in Bogotá, Zárate gained recognition with his restaurant Sambombi in Medellín.

Malacate’s culinary concept focuses on using local and seasonal products. For example, meats are sourced nationally, stracciatella cheese comes from La Calera, and corn and cubios (Andean root vegetables) are from the Cundiboyacense highlands. This philosophy not only ensures freshness and authenticity in the dishes but also supports local farming economies.

The name “Malacate” refers to a pulley system used in kitchens to transport food between levels, a feature that has been integrated into the restaurant’s design, blending aesthetics with its culinary concept.
