The only Salvadoran restaurant on the Latin America's 50 Best Restaurants list, El Xolo is a tribute to heirloom corn and the indigenous communities that cultivate it. Chefs Gracia Navarro and Alex Herrera have spent more than eight years researching Salvadoran territory to build a menu that connects directly with local producers, without intermediaries. Located inside the National Museum of Anthropology, the space combines exposed wood, niches featuring Mesoamerican pieces, and warm lighting that invites an experience as cultural as it is gastronomic. The "Folklore" tasting menu is a journey through Salvadoran history and folklore using both ancestral and contemporary techniques.
