Pajares Salinas is an iconic Spanish cuisine restaurant located in Bogotá, Colombia. Founded in 1953 by Spanish chef Saturnino Pajares, it has maintained its prestige for over seven decades, establishing itself as a gastronomic benchmark in the city. We are with Zuleima Pajares from Pajares Salinas, who shares more about the restaurant’s history and evolution: “Hello Zuleima, first of all, thank you very much for your experience in Colombia. I would like to ask you a little about the history of this place, which has been around for more than 70 years. How did it start, where are we now, and what are the future plans?”
Zuleima responds: “After two years of renovating the establishment, we remodeled, expanded, and modernized it. We hosted a couple of events, marking a before and after the pandemic. We have now been in the market for 71 years, and we are a gastronomic institution with extensive experience. As for where we are headed, I believe our goal is to continue working every day to do things right.”

“Our favorites include starters such as seafood fideuá, grilled octopus, artichokes with ham, and our signature smoked trout. Regarding cocktails, in recent years, we have innovated with more creative options while still maintaining the classics. Pajares Salinas offers a traditional gastronomic experience for Colombians looking for a place where the essence of good food is truly lived.”

“Definitely. It is not a typical Colombian restaurant or traditional cuisine, but it is a benchmark of Bogotá’s gastronomy. Tradition and recipes have remained unchanged for more than 70 years. We are now in the fourth generation of families who have made Pajares Salinas their favorite place, ordering the same dishes their grandparents once enjoyed.”
