I wanted to create a space that wasn’t just another high-end venue but something accessible to everyone, where people could relax and enjoy great food without the formalities. I teamed up with a partner who shared my vision, though we never imagined it would lead to Michelin-star level acclaim.

Fine Dining Table: That’s a fascinating shift. Could you share more about the initial stages of this project? Did you ever dream it would reach the level of success it has?

Chef Dominik: Honestly, no. We aimed to build a welcoming place where anyone could feel good and want to return. Our focus was on creating an inclusive environment rather than exclusive fine dining. The success we’ve achieved has surpassed our expectations and affirmed that passion, not just style, drives great cuisine.

Fine Dining Table: Speaking of style, you’ve mentioned incorporating techniques learned from fine dining into your current menu. Could you elaborate on how your past experiences influence your cooking today, particularly with dishes like ramen?

Chef Dominik: Absolutely. My culinary journey really began in 2007, under a mentor from England who introduced me to Western cooking styles. I’ve spent over a decade in fine dining, learning various techniques that I now adapt to our ramen dishes here. For example, our ramen varieties, like Tantanmen and Ika Paitan Ramen, incorporate these refined techniques, making our offerings unique.

Fine Dining Table: It’s clear you’ve embraced a global culinary perspective. What have been some of your key influences from Asian cuisines?

Chef Dominik: Asian cuisines are fascinating for their bold flavors, which resonate well in Europe. During my travels to China and other Asian countries, I was inspired by their use of spices and methods, which I’ve brought into our kitchen. The integration of these elements is evident in how we use Asian products even in our fine dining creations.
